Most UK and US plans treat Ukraine as a rest-of-world destination, so data outside your bundle is billed per megabyte. A JamboSim eSIM on Kyivstar replaces that with one price you pay before you fly.
EE, Vodafone, O2 and Three, and in the US Verizon, AT&T and T-Mobile, all charge a daily or per-MB rate for Ukraine. Your Kyivstar data runs on a local plan instead, with no bill shock when you get home.
